Lemon Raspberry Cheesecake

I got the recipe from the BBC Good Food website, but I'll share it here aswell. The serving is good for up to 12 slices with prep time of 20 minutes, approximately 50 minutes of cooking time and cooling time of at least 2 hours.

Ingredients:

Cake:
  • 225g Digestive Biscuits, turned into crumbs
  • 100g Butter, melted
  • 250g Tub Mascarpone
  • 600g Soft Cheese (e.g. Philadelphia)
  • 2 eggs, plus 2 yolks
  • Zest of 3 lemons, juice of 1
  • 4tbsp Plain flour
  • 175g Caster sugar

Topping:
  • 1/2 a 300 pot of soured cream
  • A handful of raspberries
  • Caster sugar

Method:
  1. Heat oven to 180C/fan 160C/gas mark 4. Line the bottom of a 23 cm springform tin with greaseproof paper, or just grease it and the sides with butter.
  2. In a saucepan, melt the butter and gradually add the digestive biscuits, that are finely turned into crumbs. Make sure that the butter should moisten the biscuits evenly.
  3. Press the crumbs into the tin and chill. Alternatively, quickly place it in the fridge.
  4. Beat all the other ingredients in a large bowl until properly combined, pour into the tin and bake for about 50 minutes until the cheesecake has a uniform wobble.
  5. Turn off the oven and leave the cake inside to cool down. When it is completely cool, remove from the tin and top with soured cream.
  6. I chose to make a raspberry sauce from scratch as a topping. To make this sauce, heat a handful of raspberries in a saucepan and add your desired amount of caster sugar, to taste. Drizzle 1tbsp of lemon juice, if you like. 
  7. Make sure the sauce is cool before applying on top of the cheesecake. Or top with a few raspberries on top to decorate the cake.
It was super delicious! That was my first time to ever make a cheesecake and for a first timer, I was very proud and pleased with the result! One thing I noticed was that it wasn't sweet enough for me, maybe because I have a sweet tooth. But if you do too, it would probably be good if you add a pinch more of sugar! Nonetheless, this is a lovely summertime dessert.
