Coffee and Walnut Cake

I made a coffee and walnut cake today and it was divine! So I thought I'll share how I made it to you guys...

Ingredients:

Cake:
  • 2 tbsp chicory and coffee essence
  • 175g butter
  • 175g caster sugar
  • 175g self-raising flour
  • 100g ground walnuts
  • 3 medium eggs
Filling:
  • 125g butter
  • 250g icing sugar
  • 2 tbsp chicory and coffee essence
  • 8 walnut halves
  • Icing sugar for dusting

Procedure:
  1. Mix all the cake ingredients into a bowl, until smooth. Divide the cake mixture between two 18cm (7 inch) round buttered baking tins.
  2. Bake in the centre of the oven at 180C (350F or gas mark 4) for 25-30 minutes. 
  3. Remove from the oven and leave to cool for 5-10 minutes. Then, remove from the tins to cool completely.
  4. For the filling, beat together the butter, icing sugar and coffee essence until smooth, adding 1 tbsp of water if the mixture is still thick.
  5. Spread out the filling in between the two layers, and the rest on top of the cake. Place a walnut half on a designated slice.
  6. Dust with icing sugar before serving.
Tada! For such an easy recipe, it is delicious! My boyfriend and family loved it! It serves up to 8 portions and the ingredients are easy to find on any supermarket. In fact, the chicory and coffee essence can also be used to make iced coffee at home! Just add 2-3tbsp of the essence into iced cold milk, and some sugar if you like it sweet. And voila! It tastes just like Starbucks, you may now aswell start charging £3 for a cup.
